Ingredients:

  • 1.5 cups soaked chickpeas
  • 1 chopped cucumber
  • 1 chopped red bell pepper
  • 1/2 cup parsley
  • sea salt and pepper to flavor

Dressing:

  • 1 tbl raw honey
  • 2 tbl lemon
  • 2 tbl olive oil
  • 2 tbl water or more for thinning
  • 1/4 tsp grated fresh or ground turmeric

Instructions:

  1. Soak chickpeas for 6-8 hours in water + 2 tbl apple cider vinegar. Soak, and simmer for 1 hour. Drain and set aside.
  2. Chop all vegetables.
  3. Blend dressing in a bowl.
  4. Combine in bowl and enjoy as a salad or pair with protein as a side.
