- 1.5 cups soaked chickpeas
- 1 chopped cucumber
- 1 chopped red bell pepper
- 1/2 cup parsley
- sea salt and pepper to flavor
- 1 tbl raw honey
- 2 tbl lemon
- 2 tbl olive oil
- 2 tbl water or more for thinning
- 1/4 tsp grated fresh or ground turmeric
- Soak chickpeas for 6-8 hours in water + 2 tbl apple cider vinegar. Soak, and simmer for 1 hour. Drain and set aside.
- Chop all vegetables.
- Blend dressing in a bowl.
- Combine in bowl and enjoy as a salad or pair with protein as a side.
