Ingredients:

  • 2 cups wild rice
  • 1/2 red bell pepper chopped
  • 1 cucumber chopped into 4s
  • 2 cups chopped cherry tomatoes
  • 1/2 chopped red onion
  • 4-5 handfuls of arugula
  • 1/2 cup Kalamata Olives

Dressing:

  • 1/2 squeezed lemon
  • salt + pepper
  • olive oil to drizzle

Instructions:

  1. Soak wild rice in water + 2 tbl apple cider vinegar for 8 hours. Drain water. Bring water to boil in pot, cook rice per instructions. Drain, set aside and let cool.
  2. Chop red onion, cucumber, red bell pepper, kalamata olives.
  3. Mix vegetables, arugula in a bowl. Add 2 cups wild rice once cooled. Add dressing.
