Ingredients:
- 2 cups wild rice
- 1/2 red bell pepper chopped
- 1 cucumber chopped into 4s
- 2 cups chopped cherry tomatoes
- 1/2 chopped red onion
- 4-5 handfuls of arugula
- 1/2 cup Kalamata Olives
Dressing:
- 1/2 squeezed lemon
- salt + pepper
- olive oil to drizzle
Instructions:
- Soak wild rice in water + 2 tbl apple cider vinegar for 8 hours. Drain water. Bring water to boil in pot, cook rice per instructions. Drain, set aside and let cool.
- Chop red onion, cucumber, red bell pepper, kalamata olives.
- Mix vegetables, arugula in a bowl. Add 2 cups wild rice once cooled. Add dressing.
